cooking your pasta in less water. Today's Serious Eats: Food Lab post by
J. Kenji Lopez-Alt re-examines this idea in depth and finds truth to the heresy. Even to the point that some small pastas can be cooked rather like minute rice (boil water, add pasta, stir, lid the pan, turn off the heat, wait 15 mins, al dente pasta!). Alton would be proud.
